The International Association of Book-keepers (IAB) use the '-', and have done since they were established in the 70's. They refer to their members as book-keepers so I've always used that version of the spelling. This forum also uses the '-' as do some government websites and tution providers, although some don't use the dash just to be consistent.
I agree with John as long as you're consistent yourself that's the main thing.
I have always used 'Bookkeeping'. I have done since it actually came up in a pub quiz I was attending (for educational purposes only of course), something about it being the only word in the English Dictionary that contains 3 consecutive sets of double letters; 'oo', 'kk' then 'ee'. Something like that anyway!
I do believe all are correct, but i prefer the first one.
