When you add an employee, on the emplyment tab of their record, there is a section called Director Status - it has a drop down menu where you can amend the record to show either Director or Director (Table method).
If a director wanted to pay a certain amount for nic each month ( manually inputting the nic)would you make his status director or director table method

The amount of NIC to be paid is not a matter of choice and shouldn't be entered manually. Directors should either use the annual method or the table method (and the table method is only permitted broadly where the director is paid regularly, like a normal employee)
