Unpaid voulantary 'employee'

What are the rules regarding hiring a voluntary unpaid employee?

I am considering whether this is something to use, but am unsure about the rules

Also if the 'employee' incurs expenses whilst working for the business, can the expenses be re-paid to the 'employee'?

My take on it is to stay as far as possible away from the word 'employee' and at all times infer that you're doing them a favour. Considering whether this is something to use implies that you're getting something out of it, whereas any help you receive should be merely an unexpected bonus -- that is why they are unpaid.

Make all this crystal clear in anything put in writing.
